In a return to its roots, NYC’s three-Michelin-star restaurant Eleven Madison Park has announced it will reintroduce meat and seafood to its menu after four years of operating as an all-plant-based restaurant. Chef-owner Daniel Humm, who initially transformed the restaurant into a vegan haven as a statement on food sustainability, shared that this decision arose from a desire to create a more inclusive dining experience. “Eating together is the essence of who we are,” Humm explained, adding that the shift reflects a new menu language that embraces choice—offering plant-based options alongside select animal products like oysters, lobster, and their famed lavender honey-glazed duck. ���

While the move has financial motivations, particularly with declining private bookings and wine sales, it also mirrors a larger cultural trend in the U.S. Plant-based food sales in foodservice have dipped, even as meat consumption continues to rise. However, the restaurant isn’t fully abandoning its plant-based ethos. With 80% of the meal still centered around vegetables, Eleven Madison Park aims to strike a contemporary balance.
