Do you have a food that brings you straight back to your childhood? These are mine šŸ’› From BA SinĆ©ad O’Donovan

My mum has been a Home Economics teacher for 35 years, and these were the first thing she ever taught me and my friends to bake in our kitchen. A total mess, but such great fun. They take ten minutes on a Sunday, require only six ingredients, and are cheap to make.

Nutritionally, the oats do the work. Fibre and slow-release energy, so kids get from breakfast to little break without the slump. The seeds and dried fruit mean you can keep the sugar modest without losing the chew. And they’re brilliant for adults too!

The recipe (makes 12-16 squares)

250g SuperValu porridge oats
125g SuperValu butter
3 tbsp SuperValu honey
75g SuperValu soft brown sugar
50g SuperValu pumpkin or sunflower seeds
50g SuperValu raisins or chopped dried apricot
Method:

1. Heat the oven to 180°C (160°C fan) and line a 20cm square tin with baking paper.
2. Melt the butter, honey and sugar together in a saucepan over low heat, stirring until smooth. Don’t let it boil.
3. Take off the heat and stir in the oats, seeds and dried fruit until everything is coated.
4. Tip into the tin and press down firmly with the back of a spoon, so they hold together once baked.
5. Bake for 20 to 25 minutes, until golden at the edges. They’ll still feel soft in the middle and firm up as they cool.
6. Leave to cool fully in the tin before lifting out and cutting, or they’ll crumble.
7. Press the mix down really firmly, that’s the main thing that stops flapjacks from falling apart. Let them cool before cutting into squares.

She wasn’t trying to make memories. She was just trying to get through Sunday. Turns out that’s how the memories get made šŸ’›

Ingredients⁣
1 pack SuperValu Irish stewing beef⁣
Salt & pepper⁣
3 tbsp SuperValu olive oil⁣
25g SuperValu butter⁣
2 garlic cloves, crushed⁣
1 onion, diced⁣
110g carrots, diced⁣
110g celery, diced⁣
2 tbsp flour⁣
600g chopped tomatoes⁣
2 tbsp tomato purée⁣
1 beef stock cube⁣
200ml red wine (or beef stock)⁣
300ml water⁣
1 tsp dried thyme⁣
2 rosemary sprigs⁣
2 bay leaves⁣
500g pappardelle (or tagliatelle/fettuccine)⁣
Parmesan & chopped parsley to serve⁣
⁣
Method⁣
1. Coat beef with half the oil, season and sear in butter until browned. Remove.⁣
2. Add remaining oil and butter, then cook onion, garlic, carrots and celery until softened.⁣
3. Stir in flour, then add tomatoes, tomato purée, stock cube, wine, water and herbs.⁣
4. Return beef and juices to the pot. Cover and simmer on a low heat for 2–3 hours.⁣
5. Shred the beef, return to the sauce and simmer uncovered for 30 minutes until thickened. Season to taste.⁣
6. Cook pasta until al dente, toss through the ragu and serve with Parmesan and parsley.⁣

Ingredients⁣
4 SuperValu Signature Tastes Irish Wagyu Premium Beef Burgers⁣
1 bag SuperValu Signature Tastes Triple Cooked Chips with Beef Dripping⁣
⁣
To Garnish:⁣
100g SuperValu Signature Tastes Cashel Cheese, crumbed⁣
1 head of SuperValu Baby Gem, separated into leaves⁣
4 SuperValu Signature Tastes Brioche or Sourdough Buns⁣
⁣
For the BBQ Onions:⁣
4 SuperValu Red Onions, finely sliced⁣
1 tbsp SuperValu Olive Oil⁣
7 k***s of SuperValu Butter⁣
Salt and pepper⁣
2 tbsp SuperValu Signature Tastes Irish Whiskey BBQ Sauce⁣
⁣
Buffalo Mayonnaise:⁣
100ml SuperValu Mayonnaise⁣
50ml SuperValu Crème Fraîche⁣
2 tbsp SuperValu Signature Tastes Buffalo Sauce⁣
Salt and pepper⁣
⁣
Method:⁣
Take the burgers from the fridge 30 minutes before cooking to allow them to come to room temperature.⁣
To cook the burgers: drizzle with vegetable oil, then sear on a hot barbecue until browned on each side. Move to a cooler part of the BBQ, top with blue cheese, and close the lid to allow the cheese to melt.⁣
For the BBQ onions: sauté the onions in a small pot over medium heat with olive oil and butter for about 10 minutes until soft. Turn off the heat, add the BBQ sauce, and mix well.⁣
For the Buffalo mayonnaise: combine all ingredients in a small bowl and mix ×”×™×˜ā£
To serve: place the burgers on toasted buns with Baby Gem leaves, add a generous spoon of Irish whiskey BBQ onions, and top with the cheesy Wagyu burgers. Serve with triple cooked chips and Buffalo mayonnaise on the side.
