A life long obsession and interest in good food has
led us to explore as many different types of foods,
in many of the countries our chefs have travelled to. The freshness
of the food, the beauty in presentation, the overal
health qualities, makes for a wonderful product. The hot foods we cook everyday on our premises,
proves to be very popular with our customers,
again, taste, freshness & quality of ingredients are
one of our key focus points. Dashi loves to create their food from scratch,
we love to smoke our own fish, bacon and duck,
with light oakwood. All of our sauces, are made on premises. We are
grateful to work with the finest produce available. Dashi has come a long way, from learning how to make
sushi in a tiny Japanese kitchen, with our admired teacher,
sensei Narihito, who's great enthusiasm after 30 years of
making sushi and love of Japan, really inspired us,
to make the best sushi we can. We hope you enjoy our sushi and hot foods,
as much as we enjoy making them for you! We are closed on Sundays, because there is no fresh fish available for sushi. We only want the very best for our customers.

We have just one place left for our Sushi Workshop on Sunday 18 October and we’re already looking forward to it enormously🤗

But I also wanted to say this…
You don’t have to wait for us to announce the next event.

Hi guys! I was thinking of doing this workshop a little differently this time.🤗🥰

I’m going to prepare the ingredients right there at the table with you, so you can actually see exactly what I’m doing — and then we’re going to make some really good sushi with it🍤🍣

I’ll also make our snacks at the table, so if I’m making you something like salmon roses, Atlantic prawn tempura or one of my little sushi bites, you can watch how I do it... and then, obviously, eat it. 😂

I think it’ll be a really fun way of doing it because there’s not too much pressure on the rolling. You’ll absolutely learn how to make and roll sushi, pick up little tricks and combinations you might not know, but this one is really about having fun, catching up and eating lots of very good sushi.

I’ll also be buying according to what looks beautiful and fresh, so there may be a few surprises on the table.
Sunday 18th is filling up very quickly now. If there are enough people who would also like to come, I can add an extra workshop on Saturday 17th — but I’ll only run the Saturday if we have enough people to fill it.

We’ve been making sushi in Cork for a very long time ⌛️ in fact, we opened Cork’s very first sushi bar. 🍣✨️🎈

Last year, after many years of Dashi and with all of us exploring new directions in our lives, careers and businesses, we closed the shop.

But something funny keeps happening. We run into people in the street and they ask us: “Are you ever doing the sushi workshops again?”
Well… yes. We are. ❤️

We’re getting together again for a proper Dashi sushi evening — relaxed, hands-on, full of food and, inevitably, a lot of laughing.

This workshop will be a little different from the ones we did before. We’ll be taking things further and preparing more of the ingredients from scratch, so there’s plenty to learn — but still in the easy, informal way we’ve always taught.

And our priorities remain impeccable: make beautiful sushi, eat a ridiculous amount of it, and take some home. 😂

Our first workshop is Sunday 18 October at 6pm. If Sunday fills and there’s enough interest, we’ll open a second workshop on Saturday 17 October at 6pm aswell..

Come yourself, bring someone you love, or give it as a gift to someone who’d rather have an experience than another thing.

Mostly, we’re just really looking forward to getting around that table again, catching up on life 🎉 and, obviously, making some bloody good sushi.
