Behind every service, every plate, and every detail, there are people quietly making it all happen.

As we look back on our XXI Anniversary, we're reminded that celebrations like these are never built by one pair of hands alone. They come together through teamwork, trust, and the people who continue to show up with care, day after day.

Meet two of them.

Aditami (Aditami Rahmiputri)'s journey has taken her from Jakarta to kitchens in Qatar, before finding a home at Room4Dessert. Today, as our Pastry Sous Chef, she helps shape not only the desserts that leave the pass, but also the people around her, bringing together creativity, precision, and a genuine love for sharing what she's learned.

Alongside her is Dewi (Ni kadek dewi), whose calm presence and steady hands have become an important part of the Room4Dessert kitchen. Whether refining a dish, supporting the team through service, or helping bring new ideas to life, she approaches every day with quiet dedication and an openness to keep learning.

Different journeys. Shared purpose.

Thank you, Tami and Dewi, for everything you brought to this year's celebration, and for everything you continue to bring to Room4Dessert, every single day.

From one room to another. From one team to the next. Carried by conversations, ideas, friendships, and countless people who left something of themselves behind.

Over the years, we've learned that the moments we remember most rarely happen on the schedule.

They happen around the edges.

At the table. At the bar. Somewhere between saying hello and not wanting the night to end.

Twenty one years later, we're still grateful for those moments.

And for the people who keep making them possible.

Some flavors travel far enough to become memories before we even taste them ourselves.

Nobu began there.

Miso carrying depth and warmth, slowly built over time. Something savory, sweet, rich, and deeply comforting all at once. A flavor that doesn’t hit sharply, but settles gradually, staying longer than expected.

In this dish, we stay close to that feeling.

The glaze softens into the ingredient beneath it, creating something almost quiet in the way it unfolds. Gentle caramelization, subtle sweetness, umami that lingers softly at the back of the palate.

Not loud.
Not trying to prove anything.

Just balanced enough to keep drawing you back in.

Season 20 | Porridge

Porridge isn’t something we grew up questioning.

It’s something that was always there, warm, soft, filling. The kind of dish that doesn’t ask for attention, but somehow stays with you.

In Season 20, we started from that memory.

Not to change it completely, but to look at it more closely. To understand what makes it comforting in the first place. The way it holds warmth. The way it carries flavor without overwhelming it.

Here, it moves a little differently.

The base is soft and steady, but around it, things begin to build. A savory depth that sits underneath, a gentle heat that lingers, small condiments that shift each bite, something crisp, something bright, something that adds weight without taking over.

You don’t experience it all at once.

It comes together slowly, spoon by spoon.
A little richer. A little sharper. A little more complete.

It holds, even after the last spoon.
