Seventeen thousand islands. Hundreds of languages. And a kitchen that contains them all. Chef Agus, Executive Chef of Ron Gastrobar Indonesia, together with Helianti Hilman, Indonesia’s foremost champion of indigenous ingredients, arrive at the pass not just with a recipe but with a map, drawn in flavour, memory, and the indigenous knowledge of communities who have cooked with intention for centuries.

Through nypah and coconut, the brooding depth of kluwak, palm sugar, and the ancient craft of traditional salt-making, they trace the culinary soul of the Nusantara. Moderated by Edward Spiers, this is an invitation to taste Indonesia as it has always understood itself, wild, wise, and gloriously alive.

Morning light, sharp herbs, and three of Thailand’s most compelling kitchen minds. At this Chef’s Table session, Prin Polsuk, the Michelin-starred force behind Bangkok’s Samrub Samrub Thai and a man who has spent decades reviving forgotten recipes from century-old Thai cookbooks, takes the pass alongside Joe Napol, pioneer of new Thai cuisine and the chef behind Michelin-starred NAWA and Samlor in Bangkok, and Aaron Pribadi, Head Chef of Fu House in Bali, who leads the kitchen with a bold, fire-driven approach to Thai-inspired cuisine.

Prin prepares his Kanom Jeen Sao Nam, delicate rice noodles in cool coconut cream, a dish of quiet complexity. Joe brings his Khao Yum, a Thai rice salad alive with sharp herbs and fermented depth. Fu House rounds it out with an Isaan Breakfast Sandwich, bold, punchy, and built for morning light. Fermented heat, sharp herbs, controlled chaos. Thailand’s new wave, plated live, no shortcuts.

Join us at the Indus Supper Club for an evening of music and storytelling. We blend one of the world’s oldest music forms, tabla, with experimental Balinese music and storytelling, fused with Sufi poets, love stories from across the world. Tabla maestro Sandu, and renowned Balinese composer, Yudane, will merge musical and poetical worlds with poet, Namal Siddiqui. Sandu’s dynamic percussion, and Yudane’s contemporary soundscape, redefine what’s possible between East and West, building bridges between cultures and people.

Join us for an experience that pushes the boundaries of poetry & music as past & present meet.

Would William Wordsworth still be a Romantic if he lived in this century? Would Chairil Anwar claim love and other mundane things if he could write today? How prolific would Faiz Ahmed Faiz have been if he had lived longer? Was Sylvia Plath searching for hope in her poems? Have we misunderstood the love in Rumi’s verses? Would William Shakespeare still feel relevant today? If not for the poems they wrote, these individuals may have been forgotten. But they are poets. For their anguished souls, deprived of sleep yet blessed with thought, they wrote and shaped the way we see the world.

So bring your favourite poems by dead poets and let’s read them together at Indus Restaurant. Let there be poetry and reverie. In the darkest hours of the night, it is the faintest glow of the moon, the first determined ray of light at dawn, that opens a poet’s heart to verse and longing.

Note: Each reading is 5 minutes long, so please plan your poems accordingly.
