A few years ago, I was talking with a fellow hospitality colleague about what it really means to build a restaurant day by day—and how deeply I love being a restaurateur. At one point, I was told: “You sound like Danny Meyer from the US. Have you heard of him?”

The very next day, I was handed Setting the Table. It quickly became one of the most important books I’ve ever read—capturing the mindset, values, and attitude behind one of the most successful hospitality careers, and putting into words so many things I had always felt instinctively.

Danny, thank you for being such a huge inspiration—not only to me, but to the entire hospitality industry.
