🇭🇺 Honnan származik a pizza?
A pizza eredete az idő homályába veszett, az ezzel kapcsolatos adatok rendkívül bizonytalanok. A ma ismert pizza az olaszországi Nápolyból származik, de különféle feltétekkel megsütött lapos kenyerek már az ókori rómaiak idején is népszerűek voltak. Akkoriban a tészta nem igényelt erjesztést, és közvetlenül tűzön vagy forró köveken sütötték.
Az első nyomok a "pizza" szóról még az ezredforduló előttre tehetők. Először egy sütőben készített hajtogatott lapos kenyeret jelentett, és csak a 18. században vált Nápoly névjegyévé. A pizza, szemben a vidék fényűző és bőséges ételeivel, az ideális étel volt egy túlnépesedett és szegény város számára: olcsó, gyors és tápláló.
A kifejezetten a pizza sütésére szolgáló sütők száma rohamosan nőtt, azonban a pizzát legalább 1830-ig csak utcai ételként árusították. Az következő évtizedekben a pizzafogyasztás hatalmas növekedést mutatott, és a mai napig ismert nápolyi pizzává vált, amit a város nemes osztályai is kedveltek, egészen I. Ferdinánd király udvaráig.
Miután a Marinara megjelent, eljött Margherita ideje is, amit Raffaele Esposito séf készített 1889-ben Savoyai Margit királynő tiszteletére az olasz zászló színeivel: bazsalikom, mozzarella és paradicsom.
Érdekesség: csak az 1940-es évektől kezdve vált a pizza igazán ismertté Nápolyon kívül, köszönhetően a sok nápolyi bevándorlónak, akik magukkal vitték ezt a hagyományt Amerika keleti partjára. A többit pedig már ismerjük...

🇬🇧 Where does pizza come from?
The origin of pizza is lost in the mists of time and as such quite uncertain. Pizza as we intend it nowadays has been originated in Naples, Italy, but flatbreads with various toppings were largely consumed already by the Ancient Romans. Back then the dough did not require leavening and was directly cooked on fire or hot stones.
The first traces of the word “pizza” date back to before the year of one thousand. Firstly, it referred to a folded flatbread cooked in an oven, and only in the 18th century pizza becomes a business card of Naples. Pizza, combined with the products of a luxuriant and generous land, was the ideal meal for an overpopulated and poor city: cheap, quick, nutritious.
The number of ovens exclusively dedicated to pizza was growing rapidly. However, pizza still has been sold only as street food at least until 1830. In the following decades pizza made giant leaps towards what we know today as traditional Neapolitan pizza, being appreciated also by the noble classes of the city, up to the court of King Ferdinand I.
After Marinara came to light it was the time of Margherita, created in 1889 by chef Raffaele Esposito in honor of Queen Margherita of Savoy with the colors of Italian flag: basil, mozzarella and tomato.
Fun fact: only from the Forties pizza became really known outside of Naples thanks to the big number of Neapolitan immigrants who brought this tradition to the East Coast of the USA. The rest of the story up to the present day is known.

🇮🇹 Dove ha origine la pizza?
L'origine della pizza si perde nella notte dei tempi e come tale è piuttosto incerta. La pizza come la intendiamo oggi ha avuto origine a Napoli, ma focacce con vari condimenti erano già largamente consumate dagli antichi romani. All’epoca l'impasto non necessitava di lievitazione e veniva cotto direttamente sul fuoco o su pietre roventi.
Le prime tracce della parola "pizza" risalgono a prima dell'anno Mille. Inizialmente si riferiva ad una focaccia ripiegata cotta al forno, ma solo nel Settecento la pizza divenne un biglietto da visita della città di Napoli. La pizza, abbinata ai prodotti di una terra rigogliosa e generosa, era il pasto ideale per una città sovrappopolata e povera: economico, veloce, nutriente.
Il numero dei forni dedicati esclusivamente alla pizza cresceva rapidamente. Tuttavia la pizza continuò a essere venduta solo come cibo da strada almeno fino al 1830. Nei decenni successivi la pizza fece passi da gigante verso quella che oggi conosciamo come tradizionale pizza napoletana, venendo apprezzata anche dalle classi nobili della città, financo dalla corte di Re Ferdinando I.
Dopo la Marinara fu la volta della Margherita, realizzata nel 1889 dallo chef Raffaele Esposito in onore della regina Margherita di Savoia con i colori della bandiera italiana: basilico, mozzarella e pomodoro.
Curiosità: solo a partire dagli anni Quaranta la pizza divenne veramente conosciuta fuori Napoli grazie al gran numero di emigranti napoletani che portarono questa tradizione sulla costa orientale degli Stati Uniti. Il resto è storia.
