Danas Pelegrini slavi 19. rođendan, grad obilježava blagdan sv. Ante, a Šibenik ponovno postaje velika pozornica otvorenjem Međunarodnog dječjeg festivala.

Devetnaest godina okusa, ljudi, uspomena i priča koje su nastajale upravo ovdje. Hvala svima koji su tijekom svih ovih godina bili dio našeg stola.

Ugostiteljstvo nastaje ondje gdje se susretnu terroir, godišnje doba i ljudi zbog kojih se priča uvijek iznova nastavlja.
Naša kuhinja potječe iz mjesta u kojem živimo — od izvora i brda, preko obale do otoka. Šibenik je u svemu tome prirodno središte, grad između kopna i mora. Ta se ravnoteža osjeti i na tanjurima.
Ali ono zbog čega iskustvo ostaje je toplina servisa, trenuci koji se pamte i okusi koji ih čuvaju.
Za nas su to i gosti koji nam se vraćaju iz godine u godinu.

Nakon proljetne sezone ručkova, Pelegrini od lipnja nastavlja isključivo kroz večernji servis.
Ljetna sezona donosi nastavak priča o Šibeniku i okuse koji čuvaju sjećanja.

Tingul se ovdje kuhao generacijama, a punoća i masnoća patke prirodno komplementiraju njegove reducirane okuse. I onda sve to skupa dobije neku novu dubinu, a opet ostane okusom poznato i blisko.

Kroz godine, postao je ovo jedan od naših signature tanjura - svake godine u novom ruhu.

Jedan tanjur i četiri traga povijesti koja su prošla ovim prostorom.
Janjetina je ovdje oduvijek dio krajolika, ali način na koji je danas doživljavamo nastajao je stoljećima.

U jednom tanjuru susreću se različiti utjecaji Mediterana i kontinenta, svi prevedeni na Pelegrini jezik kuhinje — toplina Italije, francuska preciznost i slojevitost, začini i vatra iz Osmanskog carstva, te nostalgična tekstura iz austrougarskog traga koji je ostao duboko upisan u našu gastronomiju.

Na kraju, nije to samo jelo od janjetine.
Nego mali jestivi podsjetnik da je Dalmacija oduvijek bila mjesto gdje su se kulture susretale za istim stolom.

One plate, carrying four traces of the history that shaped this region.
Lamb has always belonged to this landscape, but the way we understand it today was formed over centuries.

On a single plate, Mediterranean and continental influences meet through the Pelegrini language of cooking — the warmth of Italy, French precision and layering, the spice and fire of the Ottoman Empire, and the nostalgic texture of the Austro-Hungarian legacy still deeply woven into our gastronomy.

In the end, it is not just a lamb dish.
It is a small edible reminder that Dalmatia has always been a place where cultures gathered around the same table.

U Pelegriniju vjerujemo da se najljepši trenuci stvaraju oko stola koji okuplja, usporava i prirodno poziva na dijeljenje.
Zato smo jedan slijed osmislili kao mali mediteranski ritual, dostupan i za ručak i za večeru. Predstavljamo novi koncept posluživanja — opušten, domaći i za dijeljnje.

Na stol dolaze riba s povrćem, pogača od slane ribe, prženi meki rak uz umak od sušenih poma, tripice od bakalara s orzom te topli kruh punjen dimljenom oradom iz Prokljana i sirom.
Svaki zalogaj nosi trag tradicije ispričane na suvremen način, a okusi postaju čuvari sjećanja.

At Pelegrini, we believe the most beautiful moments are created around a table that gathers people, slows time down, and naturally invites sharing.
That’s why we designed one course as a small Mediterranean ritual, available both for lunch and dinner. A new style of serving — relaxed, homely, and made to be shared.

To the table come fish with vegetables, salted fish pie, crispy soft-shell crab with dried tomato sauce, cod tripe with orzo, and warm bread filled with smoked sea bream from Prokljan and cheese.
Each bite carries traces of tradition told in a contemporary way, while taste becomes gatekeeper of memory.
