We are proud to announce the next 6-Day Captain Course, taking place on the beautiful island of Pag, Croatia, from August 31st to September 5th, 2026.

Designed for ambitious pizza professionals, aspiring leaders, and passionate pizzaioli, this intensive program goes beyond dough-making and baking techniques. Participants will develop advanced technical skills, leadership capabilities, workflow management expertise, and a deeper understanding of what it takes to run a successful pizza operation.

The course will be conducted under the supervision of Greg Yurkovich , whose extensive experience and guidance will help participants elevate their craft and professional mindset to the next level.

CAPTAIN PROGRAM // AUGUST & SEPTEMBER 2026 ⚽🍕

Ready to take your pizza skills to the next level?

Applications are now open for the next editions of the Captain Program at Pag Pizza Academy — an intensive, hands-on training experience designed for aspiring pizzaioli, hospitality professionals, and passionate pizza enthusiasts.

This August and September, participants will have the opportunity to learn alongside renowned pizza consultant and educator , whose expertise has helped shape some of the region’s most respected pizza concepts , one of Ljubljana’s best-known pizza destinations, bringing additional insight from a successful, modern pizzeria operation.

Throughout the program, you’ll gain practical experience in dough making, fermentation, pizza stretching, baking techniques, oven management, workflow organization, and the realities of a professional pizza kitchen. Small group sizes ensure plenty of hands-on learning and direct interaction with instructors and guest professionals.
