Two culinary philosophies, one timeless craft. Chef Vicky Cheng () of WING, ranked #11 in The World’s 50 Best Restaurants 2025, joins hands with Chef Fu Yue Liang of the two-Michelin-starred Ru Yuan () to celebrate “The Timeless Fermentation (發酵美學)”. 🥢✨

This elegant cross-city collaboration honours a shared commitment to preserving authentic Chinese culinary heritage through meticulous craftsmanship. It begins at Ru Yuan in Hangzhou on November 5 and 6, before continuing at WING in Hong Kong on November 10 and 11, delivering an exclusive dining experience that focuses on elevating fermentation as a vibrant dialogue between tradition and innovation, unveiling its transformative essence within the art of cuisine.

「烹飪哲學匯聚、共譜永恆工藝」。位列《世界50佳餐廳2025》第11名的「永」主廚鄭永麒,將與兩星米芝蓮餐廳「如院」主廚傅月良攜手合作,呈獻為期四天的「發酵美學」聯乘。🥢✨

這場跨城聯乘彰顯雙方對傳承傳統中菜烹飪文化同時充滿創新的精湛廚藝。這次限定聯乘將於11月5日至6日率先在杭州的「如院」展開,帶領賓客深入體驗發酵過程中的深厚韻味與詩意美感。隨後於11月10日至11日移師「永」,將發酵工藝成為傳統與創新間的藝術橋樑,展現其在烹飪藝術中蛻變的獨特魅力。

An exchange collaboration between Chef Vicky Cheng of WING, ranked 3rd on Asia’s 50 Best Restaurants 2025, and Chef Varun Totlani of Masque, India’s Best Restaurant and ranked 19th on the same list, they reunite this October at WING for an exclusive dining experience.

This exclusive experience merges WING’s refined evolution of Chinese cuisine with Masque’s daring reinterpretation of India’s rich culinary heritage. Available for lunch and dinner on 9 October only, reserve your seat to savour this unique collaboration.

Using some of the best seasonal premium ingredients, the tasting menu is meticulously thought out, designed and plated to showcase WING’s very own culinary identity, without confining to any culinary constraints. To amplify the experience, tasting menus are tailored according to guests’ preferences and records of previous visits for an extra personal touch.
