This recipe transports you straight to Nerano, a breathtaking village tucked away along the Amalfi Coast. Looking out at the sea, it’s hard to imagine that such an incredible depth of flavour could come from something as simple as zucchini.

That is the magic of this dish. Fresh pasta is tossed with zucchini, basil and a touch of starchy cooking water. Through careful emulsification, these simple ingredients come together to create a naturally creamy, velvety sauce that coats every strand.

A reminder that, in Italian cooking, simplicity is often the greatest expression of technique.

Adria was an ancient Etruscan and Roman city, serving as an important port where fishermen brought incredible quantities of fresh fish every day. Because of this thriving fish trade, the entire sea was named after the city.

Following this tradition, we named our ravioli Adriatico as a tribute to true white fish lovers.

Our handmade black squid ink ravioli is filled with a remarkably soft and delicate local white fish filling. To finish the dish, a hot Adriatic fish broth is poured directly over the ravioli, creating a beautiful contrast with a touch of bright lemon acidity.
