As we celebrate eight years of Hotal Colombo, Chef Gizzy reflects on what our little corner of Elgin Street has meant to her. Eight years of Sri Lankan spice, stories and a space that has always felt like home.

There is a Sinhala phrase I love: gihin ennam.

It means, "I will go and come back."

As we close the doors on Hotal Colombo after eight incredible years, it feels like the right way to say farewell. Thank you to everyone who has been part of this journey. To every guest, every team member, every friend and supporter who helped make Hotal Colombo what it became, I am endlessly grateful.

This may be the end of one chapter, but not the end of the story.

意思是：「我走了，但我會再回來。」

在與 Hotal Colombo 共同度過八年精彩歲月正式畫上句號之際，這句話無疑是表達再見的最佳方式。由衷感謝陪伴我們走過這段旅程的每一個人。對於每位賓客、每位團隊成員，以及所有幫助 Hotal Colombo 成就今天的每位朋友和支持者，我都致以無盡的感激。
