For our June Banh Mi du Monde 🥖 🇻🇳 series, we have teamed up with Chef Eric Rodriguez from Taqueria Super Macho to create a sandwich packed with full Mexican flare. “El Banh Mi Tostada” is a brilliant cross-cultural transformation, taking the soul of a classic toasted tortilla and packing it into a warm, crispy Vietnamese baguette. This banh mi is layered with shredded chicken tossed in bold Mexican seasonings, deeply savoury braised black beans and a rich, creamy scoop of fresh guacamole.

This March, Chef Fabio is bringing a slice of the FALCONE story to our latest Banh Mi du Monde. Featuring a signature dish from FALCONE Peak and Dubai – the signature Chicken Parmigiana. A tribute to Western-Italian cuisine and a nostalgic nod to Chef Fabio’s Australian roots. This banh mi features crispy pan-fried chicken breast topped with a rich garlic-basil tomato sauce, buffalo mozzarella and Parmesan, elevated with lemongrass sate and tangy pickles. It is a beautiful harmony of cultures and a firm family favourite! 🥖 🐓

This month’s Bánh Mì du Monde is made by Chef Luca from Salon des Refusés, who drew inspiration from the classic Italian pollo fritto but reimagined it with vibrant Asian flavors. Crispy fried chicken thighs are paired with a spicy mayo of Calabrian chilli and sun‑dried tomatoes, crunchy cucumber, tangy pickles, and bright lemon‑ponzu, all tucked into a toasted, crispy baguette. The result balances Southern Italian heat and Asian freshness for a lingering, season‑less bite. 🥖 🐓
