#利園一會【泡茶，為生活注入儀式感】

《小王子》裏的狐狸曾說「儀式感就是使某一天與其他日子不同，使某一時刻與其他時刻不同。」生存與生活的分別，大概就是後者多了一點儀式感。要數生活中具儀式感的事，必少不了喝茶。從學會品嚐茶的味道層次，到了解造茶的藝術，甚或對一件造工精細的茶具的由衷欣賞等，茶就宛如一個甫踏進去就找不到盡頭的空靈之境，一旦愛上，就永遠只想追求更多。

前陣子訪問過 的Oliver，他說在香港造茶的圈子很小，與其說是競爭對手，不如說是惺惺相惜的知音人。今天我們便找來了其中一位知音人Alky，跟我們分享他與茶的緣份。「中學畢業後，一次跟家人往一所體面的中菜館吃飯，偶然喝了一杯跟平日茶樓味道不同的茶，便觸發起我對茶的好奇，開始流連茶莊及茶館等地方。後來也陸續報讀了不同的茶藝班，並考取了評茶員的資歷。」Alky回想道。

現時，Alky已擁有自己的茶品牌，也成為了不少餐廳或cafe的固定供應商。「以往若要品嚐到高質素的茶，往往要到消費較高的茶館。我們則希望大家既可品嚐到嚴選精製的茶，同時讓品茶不至於成為奢侈的興趣，故我們率先研製的也是較易於市場普及的樽裝冷泡茶。」他續說。至於現時合作的餐廳，有的亦位於利園區，主要也是自成一格、用心追求品質的小店。

從Alky的談吐舉止中，不難看出他是一個很注重美感與品質的人，想必對品茶也有很高的準則吧？惟他卻笑言因自己修讀Fine Arts出身，習慣了所有東西也沒有單一定義，故他看品茶也沒有一個標準答案，「聽人家分享品茶準則，倒不如隨性一點，遵從自己的心情與喜好吧。每人都有自己專屬的情感連繫，如小時候婆婆給你沖過一壺鐵觀音，自此你特別喜愛它也沒甚麼不可，有時非得要別人來告訴你哪些才是價值不菲的上等佳品。而當你開始不滿足於目前，想獲取更高程度的享受時，自然要主動花心機求學問，親自體悟出更多茶的特性，道理就如品酒般。」他分享道。自深造茶藝後，他亦坦言自己少了一點浮躁，多了一份專注，正因造茶者必須培養出細膩的覺察，才能造出一手好茶。

【糅合雅緻茶品、婉約長衫與當代水墨】

Moonlight Tea再次為各位愛茶好友帶來嶄新的茶體驗！在剛過去的星期一，我們出席了中環畢打行 #漢雅軒 的慈善晚聚，以雅緻玻璃裝冷泡茶及粉色花藝，為一眾 #長衫薈 成員帶來別出心裁的茗茶藝術體驗。

這次「仲夏夜之疊山行」慈善晚聚由漢雅軒主人張頌仁先生作導賞，向在場嘉賓娓娓道出當代水墨藝術家羅穎的創作理念。為配合清涼畫境，Moonlight Tea特意定制茶單，分別提供白牡丹、台灣東方美人及法國皇家伯爵茶等三款口味。白牡丹清醇微甜，東方美人熟果蜜香，伯爵茶則清新芬芳。口味由淡入濃，各具特色。以帶有細緻佛手柑香氣的伯爵茶搭配法式甜點馬卡龍，更是獲得不少嘉賓的讚賞。

【Blending Tea, Cheongsam & Contemporary Ink】

Moonlight Tea is dedicated to bring more activities to our tea-lovers and share those beautiful moments with you! Last Monday, we joined a charity connoisseur gathering in Hanart TZ Gallery, Central. With 750mL Cold Brew Tea and pastel floral installations, we shared some unforgettable tea and art moments between the members of Cheongsam Connect.

“Cheongsam Connect: A Midsummer Night on the Layered Hills” was guided by the gallery founder, Mr Johnson Chang. He shared the creative concepts of the contemporary ink work by Luo Ying. For this special occasion, Moonlight Tea had customised a tea menu in which it provides three flavours: White Peony, Oriental Beauty and Imperial Earl Grey. White Peony is slightly sweet. Oriental Beauty has the scent of ripe fruit and honey. For Imperial Earl Grey, it is somewhat fruity. The taste is range from light to thick, and each has its own characteristics. Also, the pairing of Imperial Earl Grey with macarons had also won the heart of our guests.

【輕便裝冷泡茶 - 大吉嶺春摘紅茶】

不少愛茶好友在第一次認識Moonlight Tea的春摘紅茶時，都驚訝於其香檳般清澈的顏色。有別於一般紅茶，印度大吉嶺出產的春摘紅茶屬於輕發酵紅茶，不但茶湯琥珀清甜，更帶有淡淡優雅花香。

嚴選來自少數獲得印度國家註冊的茶莊園，茶樹吸收了喜馬拉雅山的多變氣候，形成別樹一格的風味。茶農人手採摘每一塊鮮嫩的葉芽，再放置於自然通風的室內作萎凋。其後再按其茶葉品種作相應的揉捻、發酵及乾燥。如酒莊般嚴謹的經營管理，每一口大吉嶺春摘紅茶都盛載著製茶師的心意。

Tea-lovers are often amazed by the champagne-like colour of our Darjeeling First Flush. Different from other black tea, Darjeeling First Flush is a lightly fermented tea. This amber tea is refreshing sweet with a note of elegant floral fragrance.

Strictly selected from a few tea estates registered in India, the tea tree absorbs the changing climate of the Himalayas and forms a unique flavour. The tea farmer picks each piece of fresh leaf buds and places them in a naturally ventilated room for withering. 【一分鐘 • 好茶｜如何分辨上好茶葉？】

鑒定茶葉是一門考經驗的學問，但有一些分辦茶葉的基本要素，非常值得我們記在心上。

首先是外形方面，每款茶葉依照工藝會製成不同的外形，例如龍井茶葉的外形是扁平而挺直的，有進行揉捻工序的綠茶則會是捲曲的形狀等。但不論外形如何，茶葉整體應該是乾淨無雜質或水漬，大小均勻、表面帶有光澤，聞起來沒有難聞的異味。

其次是試茶時細看茶湯的顏色。不同品質的茶葉，泡出來的茶湯顏色也大不相同。總體以言，優質的茶湯應該湯色明亮清澈。在品嚐上品的紅茶例如大吉嶺春摘紅茶時，茶杯內更會掛上一層俗稱「金邊」的黃色油環。一見到，便知道是上好茶葉了！

【Sipping Tea in a Minute｜How to Examine Quality Tea Leaves?】
Examine tea leaves is the knowledge that requires years of experience. But there are still a few basic tricks worthy of our attention.

First of all, regarding appearance, each tea is made into different forms according to its tea-making process. For example, the form of Longjing Tea is flat and straight, and Green Tea that carries out the simmering process is a curved shape. Regardless of the tea type, tea leaves should be clean, free of stains, unity in size, shiny on the surface, as well as without any horrible odour.

The second is to look at the colour of the tea soup. Each tea has its very own tone. Generally speaking, quality tea soup should be bright and clear. When tasting the quality Black Tea, such as Darjeeling First Flush, the teacup will be hung with a yellow oil ring commonly known as "Golden Circle". When you see it, you will know it is a sign of quality tea!

【當健康茶品遇上體育盛事】

Moonlight Tea積極為大家帶來不同類型的茶活動，務求與各位愛茶好友共享獨特的茶の新體驗！上星期六，Moonlight Tea帶著天然無糖的輕便裝冷泡茶到大埔體育館，支持參加了「2018頤亨全港中小學學界閃避球精英賽」的學生，為一眾充滿鬥志的參賽者打氣。

這次比賽，Moonlight Tea除了提供法國皇家伯爵茶的口味，更特別製作出限量的日本八女煎茶。種植於日本福崗縣的八女煎茶，茶湯翠綠且口感甘甜，同時含有豐富兒茶素。而根據《美國臨床營養學期刊》指出，若在運動前飲用綠茶，當中的兒茶素可增加17%的體脂消耗，更有效維持體重。

【When Tea Meets Sports】

Last Saturday, we brought our natural sugar-free 330mL Cold Brew Tea along to the Tai Po Sports Centre, supporting and cheering for a group of primary and secondary school students who participated in the “2018 Ji Hang Hong Kong Inter-schools Dodgeball Competition".

In the competition, Moonlight Tea shared the taste of Imperial Earl Grey with not only all the contestants but also a limited edition of Yame Sencha. Grown in Fukuoka, Japan, the emerald-green Yame Sencha is mellow and sweet, as well as rich in the content of catechin. According to the American Journal of Clinical Nutrition, drinking green tea before exercise could increase body fat abstraction by 17% which is a more effective way of maintaining weight.
