Meet Manuel, our sommelier at Restaurant Embla.

Raised between Sicily and Venice, Manuel fell for local wines at 18, while managing a restaurant inside a stone theatre in Modica. From there, he spent three years at a two-Michelin-star kitchen, then time at two of Italy's three-star greats: Le Calandre, once ranked no.10 on the World's 50 Best, and Enoteca Pinchiorri, home to one of the finest and largest wine collections in the world. After a stint as a wine broker, he moved to Berlin during the pandemic, and an offer brought him all the way to Hong Kong. Now he's back on the floor on the other side of the world, and glad to be doing it with our passionate team and wonderful guests here at Embla.

For Manuel, pairing is more than matching wine and food. It's about syncing with the experience and making you happy in the moment.

In his glass lately: plenty of Valpolicella Classico and Etna Rosso, both whites and reds of Valais in Switzerland, and one he always comes back to, Frappato from Vittoria.

A signature for a reason. Chef Jim’s savoury interpretation of the traditional Danish dessert, Æbleskiver, reimagines classic comfort through a modern, refined lens.

A definitive staple of the Embla experience that perfectly captures our approach to New Nordic cuisine.

Meet our new friend Eric, founder of Pottery Always, whose studio is just down the street from us in Sheung Wan. He’s been working hard to create a stunning new series of ceramics for Embla, thoughtfully designed in collaboration with Chef Jim to complement each upcoming dish. Ceramics play such an important role in helping a dish tell its story and serve its purpose. We can’t wait to unveil Eric’s creations very soon.

A little time to refresh – for Restaurant Embla, and for our team.

We're closing for a couple of weeks to accommodate for essential renovations in our dining room, and to let our team enjoy a well-earned rest.

Our final service before we temporarily close is 25 July, and we'll reopen for dinner on 12 August.

Join us before our short break and tell us about your summer plans. Reservations via the link in bio, or WhatsApp +852 9736 0605.

A true cornerstone of the dining room experience at Embla.

Those who have visited us know our General Manager, Andy Badua, as a mainstay of the restaurant – consistently leading our front-of-house team and welcoming every guest with genuine warmth.

Andy was recently awarded Service Talent of the Year by Foodie Forks. This recognition is a well-deserved testament to his relentless hard work, his leadership, and the profound dedication he shows to both our team and our guests every single day.

Thank you, Andy, for elevating everything we do.

In Sweden, there is an unwritten rule about wild strawberries: if you find a patch in the forest, you tell absolutely no one. The Swedish word for a secret, treasured haven – smultronställe – literally translates to "wild strawberry spot" for this exact reason. They are small, rare, and fiercely guarded.

Chef Jim Löfdahl managed to secure a limited supply of these intensely sweet, fragrant berries – and he is kindly sharing them with you in our current seasonal dessert.

Experience a rare taste of Swedish summer folklore before the season shifts.

Indulgence met with the sharp, clean elements of the Nordic forest.

A thoughtful study in contrast, our signature main course features premium Wagyu A4, celebrated for its exceptional marbling and deep, rich flavour profile. To balance the natural richness of the beef, Chef Jim pairs it with the bright acidity of pickled burdock, the clean heat of fresh horseradish, and a fragrant, earthy pine sauce.

Over the years, we have built what we believe is the most extensive collection of Swedish spirits in any restaurant across Asia.

From traditional Aquavits distilled with caraway and dill to rare, small-batch craft gins, our shelf is curated to bring the authentic, botanical flavours of Scandinavia straight to Hong Kong.

Swipe to explore the collection, and let our sommelier Manuel guide you through a pairing or a digestif to conclude your dining experience.
