Yes, our very own rising star JAY VERSACE keeps shining, making it to the Hong Kong & Macau Finalist on Cointreau’s Margarita Challenge!

KAMARITA 🍅
Tomatoes have always had a place on the Filipino table, bringing brightness, acidity, and depth to classics like sinigang, kaldereta, and kinamatis.

For Jay, Kamarita is a way of taking something deeply familiar and seeing it differently bringing kamatis (the Filipino word for tomato) from the kitchen into a cocktail.

Inspired by the Margarita, it pairs tomato tequila, Cointreau, tomato basil syrup, and a carefully acid-adjusted orange, tomato, and lime mix. The result is a drink that’s vegetal, savory, tangy, and refreshing.

Designed as an aperitivo, it slowly evolves as the flavored ice melts opening up the tomato notes and gently prepping the palate for what’s next.
It also works as a dessert cocktail, inspired by Shebet.

Kamarita
45 ml Tomato Tequila
25 ml Cointreau
5 ml Tomato Basil Syrup
20 ml Acid-Adjusted Orange, Tomato & Lime
Salted tomato & basil.

A little Filipino. A little Margarita. A whole lot of kamatis. Available throughout this summer. 🍅

I know it’s been a while since our documentary with Featr was released, and we wanted to take a moment to sincerely thank the entire Featr team, especially Erwan. The Dara team is truly grateful.

“The Grind” is a dedicated documentary segment and episodic series that highlights the daily realities, hustle, and hard work behind running culinary businesses. For this segment, we were initially hesitant to share our struggles. But over time, we realized it’s worth opening up about the challenges we face and what drives us to keep going.

We were overwhelmed by the number of heartfelt messages we received, and we’re genuinely grateful for every single one. We also saw new customers reach out and welcomed back more returning guests, something we don’t take for granted. Because of you, we feel even more motivated to move forward.

Once again, a big thank you to , The Fat Kid Inside Studios, and Erwan Heussaff. A special shoutout to the team that handled this documentary: , , Rivera Julius, , RM Alfonso, , .jpg, SOFIA OLIVEIRA paderes, and .

In Hong Kong, Filipino food has long existed in plain sight. It is deeply loved by the Filipino community, yet often overlooked by everyone else. Before Dara became a modern Filipino restaurant in Hong Kong, it was a family cooking out of their home during the pandemic. Led by Darang Mel, whose Kapampangan recipes were inspired by her own mother, the Bunoan family began preparing comfort food for a community that missed home.

In this episode of The Grind, we follow Darang Mel, her son Jermaine Bunoan, and the rest of the team as they balance family, tradition and the brutal realities of running a destination restaurant in one of the world’s most expensive cities.
