𝗪𝗵𝗮𝘁 𝗸𝗶𝗻𝗱 𝗼𝗳 𝗯𝗮𝗰𝗼𝗻 𝗶𝘀 𝗶𝘁?

My bacon is traditionally cured, naturally smoked pork belly made in small batches.

I start with locally sourced Guatemalan pork belly and cure it for 9 days using salt, sugar, celery powder, and black pepper. Once the curing is complete, I cold smoke it for a total of 12 hours over 3 days using hardwood smoke. Finally, I slice and package it by hand.

The result is a rich, smoky bacon with a firm texture and deep flavor. It's fully cured and smoked, with no added water or fillers -just quality pork, a traditional cure, and plenty of patience.

First bacon smell memory: With my Mum in the kitchen of our house in Basingstoke, UK. She cooked bacon while I was attempting to fly like "the boy who never grew up" wearing wax paper wings shaped from the bacon package wrappings with twinkle light memories in my head from the previous night's performance of Peter Pan.

My earliest memories of bacon are from Sainsbury's somewhere in London in the early 1960s. The butchers always looked so smart in their chef's whites.
