New blog! Discover how each variable affects the taste and aroma of your daily cup.

🧐 What is Extraction?
Extraction is the process in which we dissolve the flavors and other components of roasted and ground coffee in water. This process defines the flavor and aroma of your coffee, influenced by compounds such as caffeine, acids, lipids, sugars and carbohydrates.

How does Extraction Affect Flavor?
1️⃣ First: Fruity and acidic notes.
2️⃣ Then: Sweet and balanced notes.
3️⃣ Finally: Bitterness.

An under-extracted coffee will be acidic and unbalanced, while an over-extracted one will be bitter.

💥 Ideal level of extraction.
Generally, an extraction percentage between 18% and 22% is recommended. However, the key is to find the balance you enjoy the most.

Control Extraction
✅ Grind: finer for less acidity, coarser for less bitterness.
✅ Time: Lower for less acidity, higher for less bitterness.
✅ Water temperature: ideal between 91-96 ℃.
✅ Coffee bed depth: Uniform for consistent extraction.

💥 At The Coffee City, we are excited to share the story of one of our most beloved suppliers - Olayo Coffee. This company not only offers high quality coffee, but also has a rich family tradition and a strong commitment to sustainability and fair trade.

Olayo Coffee was born in 2011 thanks to Julio Olayo's passion for continuing the family coffee tradition. As a third generation coffee farmer in Antigua Guatemala, Julio follows in the footsteps of his grandfather Antonio Pereira, who started the plantations in the 1950's. Despite the challenges, Julio founded Olayo Coffee in 2012 and, since then, the company has grown and evolved, focusing on quality and sustainability.

🌍☕ Today, Olayo Coffee is dedicated to buying ripe coffee from small growers, processing it and selling it in Guatemala, the United States and Europe. All of its coffee is sustainable, high quality and traceable, ensuring fair prices and a positive impact throughout the supply chain.
