Ask for the bill here and something else turns up first.

I have never explained this anywhere, so I will let the people it happened to do it.

Nine in the evening and the alley has gone quiet in the way only stone streets do.

The main road is thirty seconds behind you and you cannot hear it any more. There is a lamp, there are a few tables, there is bougainvillea over the shutters and that is the whole street.

People find us by accident more often than they would like to admit. They come down here looking for a shortcut and stay three hours.

The Old Town at this hour is worth walking slowly. We are on Platonos, in the narrow part.

Kataifi is pastry that looks like shredded wheat and behaves like nothing else.

Wrapped around a prawn and taken to the right side of golden, it does something batter cannot. It shatters. You hear it before you taste it.

It is a warm appetiser, so it arrives while you are still deciding what to have next, which means the table has usually finished it before that decision gets made.

Two things worth your attention on the warm appetisers page: this and the feta in filo with honey and pomegranate cream.

Put the menu down. There is a faster way.

Order the Meze for 2. It is a selection of authentic Greek dishes, chosen here and it arrives in the middle of the table rather than in front of one person. Ten small plates, give or take, depending on what the kitchen is proud of that day.

That is the actual difference between eating in Greece and eating Greek food somewhere else. Nothing on the table belongs to anybody. You reach, you argue, you finish someone else's plate.

You will also eat three things you would never have ordered on your own. That is the point.

Ask for the Meze for 2 and let us do the choosing.

This dish is named after thieves and they earned it.

Kleftiko comes from kleftis, the Greek word for thief. The klefts took lamb that was not theirs, then cooked it sealed underground so no smoke would rise and tell anyone where they were.

The crime did not survive. The technique did. Closed, slow, nothing escaping, no shortcuts available. It is the whole reason the meat comes out the way it does.

Ours is lamb with feta, green pepper, tomato and onion on the Greek specialities page.

Twenty five years of carrying other people's dinner across a room.

I have been asked more than once why I do not sit in an office and let somebody else do the floor. Because the floor is the job.

Everything I know about this business I learned from watching a face at the moment the plate lands. You do not get that from a report. You get it from standing three feet away.

It is also why nothing gets past me. If a table has gone quiet in the wrong way, I am already walking over.

I am still out there every night and I will be the one who takes your order.

Yesterday was the last night of August and the alley already sounds different.

Fewer suitcases going past. People eating slower. The ones who are still here have stopped counting days and started using them.

August is the month we work. September is the month I remember. Same kitchen, same tables but you can hear the conversations at the next table again.

Tonight the doors are open until half past eleven, same as always.

There is one salad on this menu with the restaurant's name on it, so it had to earn the label.

Rocket and green salad underneath. Grilled halloumi across the top, still squeaking. Tomatoes, walnuts and pomegranate scattered through it.

The walnuts and the pomegranate are the whole point. Most salads in a tourist restaurant are a formality, something green to put next to the meat. This one has texture in it and something sweet and sour that keeps happening while you eat.

It also happens to be the plate that stops the conversation about vegetarians at a table of six.
