The year 1956, in the small town of Katerini – Greece, situated by the feet of mount Olympus,
Konstantopoulos family started off as merchants of Greek olives. Their love of olives, along with their continuous search for supreme quality, new
and improved products meeting high health standards, combined with their entrepreneurial spirit, soon led them to the creation of the first olive processing and packing industrial unit. Olives in all its forms, shapes,colors and in all possible packaging options, while focusing on customer service.

Chickpea & Tuna Salad 🐟

Ingredients:
For the Salad:
- 1 can of cooked chickpeas, drained
- 1 large can of tuna in water, drained
- ½ red onion, finely chopped
- 2 celery sticks, finely chopped
- 1 tbsp Capers in Brine, drained
- 8–10 Organic Green Pitted Olives
- 2 tbsp parsley or dill, finely chopped
- Salt & pepper, to taste

For the Dressing:
- ½ cup Greek yogurt
- 1 tbsp mustard
- 1–2 tsp olive oil
- Zest of 1 lemon
- 1–2 tbsp lemon juice

For Serving:
- Crackers

Instructions:
- Place the chickpeas in a large bowl and lightly mash them with a fork or a potato masher, leaving some whole for better texture.
- In a separate bowl, mix all the dressing ingredients until smooth and creamy.
- Add the tuna, onion, celery, capers, olives and herbs to the bowl with the chickpeas.
- Pour the dressing over the salad and mix well until all ingredients are evenly combined.
- Serve with crackers.
