KLEFTIKO, A DISH WITH DEEP ROOTS IN GREEK HISTORY
During the Turkish occupation, armatoles and klephts (Greek freedom fighters) hid in the mountains, pursued by the Ottomans. To cook their food without being detected, they had to conceal the smoke and smell of roasted meat. They would dig a hole in the ground, light a fire, and then cover the coals with earth and branches. In this earthen "pot," the meat would slowly cook for many hours, absorbing the scents of oregano, lemon, and wild garlic. Today, many years later, we offer you kleftiko cooked in the oven with onions, garlic, and vegetables. Juicy, aromatic, and tasty.

ΚΛΕΦΤΙΚΟ, ΕΝΑ ΦΑΓΗΤΟ ΜΕ ΒΑΘΕΙΕΣ ΡΙΖΕΣ ΣΤΗΝ ΕΛΛΗΝΙΚΗ ΙΣΤΟΡΙΑ
Κατά την Τουρκοκρατία, αρματολοί και κλέφτες κρύβονταν στα βουνά κυνηγημένοι από τους Οθωμανούς. Για να ψήσουν λοιπόν την τροφή τους χωρίς να γίνουν αντιληπτοί έπρεπε να κρύψουν τον καπνό και την μυρωδιά του ψημένου κρέατος. Έτσι έσκαβαν ένα λάκκο στο χώμα έβαζαν φωτιά και μετά σκέπαζαν με χώμα και κλαδιά την θράκα. Σε αυτήν τη γήινη στάμνα σιγοψηνόταν το κρέας για πολλές ώρες παίρνοντας τη μυρωδιά της ρίγανης, της λεμονιάς και του άγριου σκόρδου. Σήμερα, πολλά χρόνια μετά, σας προσφέρουμε το κλέφτικο μαγειρεμενο στο φούρνο με κρεμμύδια, σκόρδο και λαχανικά. Ζουμερό, μυρωδάτο και γευστικό.
