Te****le simmered slow then charred over coals, coiled onto warm yellow split-pea purée with herb oil and a few drops of vinegar. Order it with an ouzo if you're doing it properly.

Diced raw fish with peppers, herbs and citrus — a small, bright starter that changes with whatever the market and the boats bring in. No two weeks are identical.

Deep bowl, deep flavour, prawns on top.

Rice and tomato cooked down slowly until it's almost a stew, whole prawns laid over at the end so they stay sweet. Autumn on the coast, in one bowl.
