Sabazushi is a traditional Japanese sushi made with cured mackerel (saba) over pressed sushi rice, often wrapped or aged with kombu. It is especially associated with Kyoto.
Traditionally:
* Uses salt-cured and vinegar-cured mackerel (shime saba)
* The fish is often aged with kombu, which adds umami
* It is sliced into thick pieces and served at room temperature
