A classic West African dish! Here's a simple recipe for Jollof Rice:
Ingredients:
- 1 cup uncooked long-grain rice
- 2 cups water
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 large tomato, chopped
- 1 teaspoon grated ginger
- 1 teaspoon ground cumin
- 1 teaspoon paprika
- Salt and black pepper, to taste
- 2 bay leaves (optional)
Instructions:
1. Heat oil in a large saucepan over medium heat. Add onion, garlic, and ginger. Cook until the onion is translucent.
2. Add the chopped tomato, cumin, paprika, salt, and pepper. Stir well.
3. Add the rice and stir to coat with the tomato mixture.
4. Add the water and bring to a boil.
5. Reduce heat to low, cover, and simmer for 20-25 minutes or until the rice is cooked and fluffy.
6. Remove bay leaves (if using) and serve hot.
