BNKR 4 years in Georgia!

Four amazing years with coffee, experiments, familiar faces, new ideas, signature drinks, our cats, and the atmosphere that made BNKR what it is.

What started as a coffee shop became something much bigger for us - a place with its own rhythm, character, and community.
Thank you to everyone who has been with us through these years: those who came in once, those who stayed, those who worked with us, supported us, believed in us, and kept coming back.

We’re celebrating 4 years of BNKR in Georgia and for us it’s not just a date, but an important reminder of how much can grow from one idea, a lot of work, and a real love for coffee.

26 minutes. One table. A lifetime of emotion. 🍷🎭

On April 30th, BNKR hosts an intimate theatrical experience: Viktor Ryzhakov’s production, «The Gods Have Fallen, and There is No Salvation.»

Watch a raw, rhythmic dialogue between mother and daughter unfold right in our coffee shop—no stage, no distance.

The play doesn’t end with a bow. After the performance, we sit together for a communal dinner to share food, wine, and reflections.

Performance in Russian.
Dinner and wine included in the ticket price.

The idea is simple: an honest live conversation built around the questions people usually hesitate to ask.

Встреча-дискуссия «Стыдные вопросы владельцам и бариста»

Дорогие кофейные котики, мы с Денисом решили устроить экспериментальный живой диалог между гостями кофеен и теми, кто стоит по другую сторону барной стойки.

Такого формата в Тбилиси ещё не было. Хочется сделать честный разговор с острыми вопросами, но без перехода на личности и без обвинений. Спокойно разберём наши болевые точки, с сарказмом и самоиронией.

Special attention goes to the Colombia Santa Ana micro-lot

Flavor profile: coriander, dogwood berries, cherry, cornelian, cherry jam, wine
Variety: Bourbon AJI

This coffee comes from farmer Alejandro Muñoz, whose Colombian lot became the championship coffee of WBC 2025

Processing
After harvest, the cherries undergo fermentation in special bags for 2–3 daysThe pulp is then carefully removed, and the coffee goes through a second fermentation lasting exactly 3 days. Once fermentation is complete, the remaining mucilage is fully washed off, and the parchment coffee is sent to dry. Drying takes 8–10 days, allowing the flavors to fully develop.
