Shakshuka!
This is my take on a shakshuka, I’ve wanted to put one on the menu for a while and though I’ve not made one before today, I’m very pleased with the results.
This shakshuka is a mixture of charred tomatoes, red peppers and onions with basil, cumin, salt, black pepper, garlic and (thanks to some help from my Italian friend) an unfathomable amount of olive oil. The mixture is topped with two eggs, baked in the oven and served with sourdough soldiers and a small amount of tangy yoghurt. This dish (except for the yoghurt) is dairy free. Delicious!
