With a fascinating history as a centre of the spice trade, Cumbrian cuisine has a rich heritage, and local specialities have long included exotic spices with favourites such as Cumberland sausage, potted shrimps, Grasmere gingerbread, and sticky toffee pudding. Gilpin Spice is inspired by that history and the dishes follow the spice trail along the silk road – from Whitehaven all the way to Japan.

We personally source quality spices from farms who believe in nature, and have picked the tastiest dishes of every nation, guarding the authenticity of each dish whilst giving it a unique twist of our own.

Meet Ralph Rojas, our new Head Chef at Gilpin Spice.

Ralph joins us from Lucky Cat by Gordon Ramsay in Manchester, where he worked as Head Chef, creating bold, modern Asian dishes in one of the city’s best-known restaurants. His approach has been shaped by years spent in pan-Asian and Japanese kitchens, along with the creativity and street-food energy behind his own Manchester concept, Unagi.

At Gilpin Spice, Ralph is bringing fresh energy to the kitchen with more Thai, Japanese and Filipino influences, a bigger focus on sushi, and plenty of punchy flavours. He’ll also be making the most of seasonal Cumbrian produce, giving familiar ingredients a distinct Spice twist.

We’re very excited to have him leading the next chapter.

Gilpin Spice’s new menu has landed, and it’s packed with new flavours, colourful plates and plenty of favourites in the making. 🍜

Expect a fresh line-up of dishes, including Korean BBQ lamb rack with a rich, sticky glaze, pla kapong yang with punchy Thai seafood sauce, and even more sushi.

Whether you’ve loved Gilpin Spice for years or you’re a newbie, this is a menu made for exploring, sharing and enjoying every bite.

New to the menu, from 6th July, our lamb rack is glazed in a rich Korean BBQ sauce, with tender meat, deep umami flavours, and a gentle heat that builds with every bite.
