Chilli-spiced Hakka paneer stir-fry, fragrant basmati rice, fresh Indian salad and house chutneys, all wrapped in a warm flour tortilla and served with a curried yoghurt dip. Indo-Chinese meets Mexico, made in Leeds.

Bhel papdi, from The Street Menu.

Puffed rice, sev and peanuts, tossed with chaat masala, fresh coriander and tamarind chutney. It is street food in the truest sense: assembled to order, dressed at the last moment and handed straight over, because the texture starts to go the minute it is done.

In this video, Tariq takes you through it, from the order of the ingredients to why the tamarind goes in when it does.

"It is a five-minute dish," says Tariq. "Leave it sitting, and you lose the crunch, and the crunch is the point."

Seared Sykes House Farm lamb saddle, keema saag, corn yoghurt sauce.

It is three separate pieces of work on one plate. The lamb saddle is cooked in the tandoor, which gives it a char and a depth you do not get from a pan. The keema saag is slow, layered and built over time. The corn yoghurt sauce ties the two together without shouting about it.

In this video, Ankush and Tariq take you through all three, from the marinade to the plate.

"People notice the lamb first," says Tariq. "But the sauces are the part we spent the longest getting right."
