Barry recently travelled to Chiapas to visit the farms behind Ki-Saya and learn more about the people, places and processes that make this coffee so special.

From meeting Doña Tavita and the neighbouring smallholder producers she works with, to seeing how carefully the coffee is picked, sorted and dried, the visit gave us a much deeper understanding of the coffee and the people behind it.

In this video, Barry shares what he discovered and why we were so excited to bring Ki-Saya into our core range.

Having proudly supported Café Delas across a number of our coffees and blends for several years, Barry was recently invited by Covoya to travel to Chiapas to see the initiative in action first-hand. Café Delas gives women coffee producers greater equality of opportunity within the specialty coffee industry through access to education, training and the wider coffee market.

He has brought back a new coffee range; our first Mexican Café Delas origin. Mexico Ki-Saya is a washed coffee from smallholder producers in Chiapas, with notes of milk chocolate, butterscotch and hazelnut.

We've roasted it medium, developing sweetness and balance while retaining the clean character of the washed coffee. It's a versatile coffee that works beautifully across espresso and filter.

Every coffee is unique and we spend a lot of time choosing coffees that we think have something truly interesting to offer; shaped by where they're grown, how they're processed and who by. But what you taste in the cup depends on how it's roasted.

We treat every coffee differently, developing roast profiles that bring out the best balance of what each has to offer. Those profiles are refined by taste-testing them side-by-side until we find a flavour we're happy to share with you, but the hard work doesn't stop there. We continue to test batches against that profile as they're roasted, as well as serving them to customers across different coffee styles on-site, to make sure the experience stays consistent. It's all done in-house, by our expert team.

A milestone we've been looking forward to for a long time.

This weekend at House of Makers: Yorkshire Pantry, we roasted and served coffee from our van using our roaster for the very first time.
