If you walk through any Italian town on a Sunday morning, you’ll smell it before you see it. The air is thick with the rich, sweet aroma of garlic, herbs, and slow-cooking tomatoes drifting out of open kitchen windows.

This is the ritual of the Sunday Ragù.

Italian grandmothers (Nonnas) wake up at the crack of dawn to start a sauce that will simmer on the stove for six, seven, or even eight hours. In Naples, they have a special word for how this sauce must cook- “pippiare”. It basically means to bubble incredibly slowly- like a pipe smoking. If it boils, you’ve ruined it. It has to take its time so the meats get melt-in-the-mouth tender and the sauce gets rich and glossy.

By lunchtime, the entire family gathers around a massive table. There is no rush. The meal lasts for hours, filled with laughter, flowing wine, and course after course of incredible food made with patience and love.

That is the true spirit of Italian food: it’s not fast food, it’s slow soul food.
