But we’d have to change the very thing that makes people come back.

One of the biggest differences between artisan gelato and mass-produced ice cream is something most people never think about: air.

Commercial ice cream is often whipped with much more air during production (known as overrun). More air means you can make more volume from the same ingredients, which helps keep costs down.

At GG’s, we keep our overrun low. That means our gelato is denser, creamier and full of flavour because every scoop contains more actual gelato, not extra air.

We also choose quality ingredients over cheaper alternatives. Could we cut costs? Of course. But it wouldn’t be the gelato we’ve built GG’s on.

We’d rather make gelato that’s worth coming back for than simply be the cheapest.

We restock throughout the week and regularly mix things up, so there’s always something new waiting in the cabinet.
