This is a ling.
It might not win many glamour contests and it doesn’t appear on menus nearly as often as cod or haddock, but don’t let appearances fool you.
Ling is a member of the cod family, locally caught, and a fantastic fish to eat. Despite its eel-like appearance, the flesh is firm, meaty and succulent, with large flakes and a texture somewhere between cod and monkfish. It’s a fish that deserves far more attention than it gets.
This one is currently marinating in buttermilk and spices, ready to be coated in our Southern Fried coating and served as a cheaper alternative to our Southern Fried Monkfish.
Today’s mixed tempura includes:

• Haddock
