Can you tell we have been strawberry picking? We may have gone a bit overboard and so the test kitchen this week has been very strawberry heavy. Here we have a matcha cupcake with a strawberry buttercream. Although the heatwave really is too brutal for buttercream and we had to eat these all very quickly before they evaporated. Matcha is quite a divisive flavour. I was initially just going to do a lemon sponge for the base, but I personally love matcha and with the Shed closed this weekend, this bake was just for us. Would you like to see a matcha flavoured bake in the Bake Shed?

I have been asked a lot about gluten free options for the Bake Shed. This is a Lemon and Strawberry Bar. The shortbread base is made with gluten free flour and dairy free butter. The Lemon Curd is beautifully sharp with ripples of sweet strawberries and is made without eggs or dairy. The whole thing tastes like pink lemonade. It does need some tweaks but was a very refreshing snack during this heatwave.

I'll admit, I find gluten free a little intimidating as the term "free from" is an absolute. My kitchen is small and handles cereals containing gluten along with nuts and other allergens so I could never claim any of my bakes are completely free from (even with systems in place to reduce cross contamination). However, I wanted to try making some things with gluten free ingredients. I am really enjoying trying to find solutions and offer more inclusive options.

Unfortunately, I am going to have to postpone the opening of the Bake Shed on Sunday. As my friend said, this weather is brutal for buttercream (and bakers). I will post up with a new date for opening as soon as possible.

All set up at Hemfest! Its a stunning day. Awful conditions for baking, but great for enjoying some live music and a massive slab of cake. We have a good selection of bakes:

The kids thought it was Christmas with how many times the postie has been recently. Sorry guys, its just a card payment machine. I was probably quite naive with how much stuff I would need to set up little shed that sells cakes, but the doorbell keeps on ringing! Each delivery makes it feel like it is actually happening. All of the ideas in my head are becoming actual physical things (cluttering up my dining room). No turning back now!

Introducing Chocolate and Stout Cake. A decadent, moist chocolate sponge, enhanced with the malty flavour of Stout. Topped with swirls of buttercream, enriched with coffee and even more Stout.
