And then there's the lavender rose batch we've just made. The scent is absolutely incredible. Summer soap making means we can add essential oils and let the warmth help them blend beautifully. This one smells like a garden in full bloom. Once it's poured and set, it'll cure for weeks before it's ready to use. Worth every second of waiting.

Once the honey is spun out, it still needs a bit of love. We pass it through a sieve to catch any large wax flakes and debris. This is where patience comes in. The honey flows through slowly and we're left with pure, clean honey ready for jarring. No filters, no processing, just honey as nature intended with a quick tidy up.

It's mesmerizing to watch and honestly one of our favourite parts of the whole process. Spin, spin, spin and out comes the honey.

Extraction day is coming soon. First step is uncapping the frames. The bees seal their honey with wax cappings to keep it fresh, so we carefully lift these off with a honey fork. It's a bit like opening a present, except the present is liquid gold and we're trying not to waste a drop. The uncapped frames go straight into the spinner.

We leave plenty of honey in our hives. Not because we're being generous, but because it's what the bees need to survive....

We leave plenty of honey in our hives. Not because we're being generous, but because it's what the bees need to survive.

Honey isn't just food. It's complete nutrition. It's got everything a bee colony needs to get through the hard months - carbohydrates, proteins, minerals, enzymes. When a bee eats honey, it's eating real, whole food that it made itself.

Sugar water is... well, it's sugar and water. It keeps them alive in the short term, but it's not the same. It doesn't have the nutrients. It doesn't have the enzymes. It's like living on fizzy drinks instead of proper meals.

When we harvest honey, we take what we need and leave what the bees need. It means we produce less, we sell less, we make less money. But our bees are strong. They survive the heat. They survive the winter. They thrive.

That's why our honey tastes so good. Because the bees that made it were properly fed, not just kept alive on emergency rations.
