A warm hello to our new followers 👋🏼 We thought we’d let you know a bit of our back story and how we got to opening Cowgirls in Redruth.
We started ‘Homage to the Bovine’ in 2021, selling our pasture fed retired dairy beef straight from the farm. Every year some of the cows retire from the milking herd. They are given 18 months of retirement on the outskirts of the farm at pasture before becoming artisan beef.
Normal retail beef is under 30 months old, our cows can be up to 10 years old which is the root of the deep beef flavour. We are probably the only farmers in the UK selling our own retired dairy beef straight to the customer. We have our own butchery and dry aging store so we can manage the whole process. Our beef is hung for 28 days to loosen texture and enhance excellent flavour.
We set up at the opening of the Buttermarket and loved selling our burgers to the general public. After our one year term we quickly learnt that we needed a bigger space, to do things on our terms and to really go for it. We took a deep breath and went for our dream space - The Drapery, 4 West End, Redruth, an iconic and historic building in Nathan’s home town. The steel-framed, glass-fronted architectural gem will soon be the first HQ of our burgers, sides, ice creams and coffees and beef! We absolutely cannot wait to show you all what we have been working on behind the scenes.
