Important update
Due to our wonderful head butcher and butchery team being made redundant with immediate effect, this unfortunately left us without the structure, knowledge, and security we had with Sky Park Butchery/farm who now intend to run the butcher area with little knowledge or team.
We all know times are tough in business, and margins matter — but for us quality matters MORE! Your staff should be VALUED! Your customers should be VALUED. You don’t protect margins by lowering standards or by making skilled butchery staff, including your head butcher, redundant overnight. These people have families, lives, and children. To us, people are always part of the business model, not disposable from it.
If I walked into a butcher’s shop and asked for fillet but came home with rump, I’d complain. That, in many ways, is how this situation feels to us.
Following a meeting on Monday, it became evident that the decision had already been made to remove the butchery team entirely and replace them the day after. Whilst we will always endeavour to maintain the highest standards possible, this means we now depart alongside the butchery team.
Over the past few weeks, we have been searching for another exceptional butcher who can maintain the recipes, quality, and standards that make Three Cuts what it is. It’s incredibly important to us to know our meat, know our products, and above all know the core ingredients we are serving to our customers at every single event.
I’m someone who wants to know exactly what I’m eating, and we will always strive to think customer-backwards
This week we are proud to be collecting from our previous butchers - Astles award winning butchery Portsmouth who know us very well.
A very special mention must go to George, head butcher — previously at Sky Park Butchery and now sadly made redundant with immediate effect.
George is an incredibly talented butcher whose passion and skill were clear for everyone to see. Anyone who visited the shop will remember the outstanding meat counter George and his small team created every single day.
You will all be hugely missed, and we cannot thank you enough for everything.
