After the coffee has been harvested, the coffee cherries are floated and sorted to remove any defects before moving to the pulping stage. Once pulped, a generous layer of the cherry’s sticky fruit (the “honey”) is intentionally left on the beans as they dry. This prolonged contact with natural sugars enhances sweetness and mouthfeel, creating a candy-like profile, while still preserving cup clarity.
It’s rare that we stock honey processed coffees, but as soon as we tasted this Ethiopian we knew we had to add it to our shelves. We have a limited amount of this amazing coffee so grab a bag while you can!
