The “Mother” dish was created as a tongue in cheek kind of dish.
When I first opened my restaurant in London, my mum was coming down from Scotland and she was obviously very excited that it was my first restaurant. I had the opening night of 50 people having a tasting menu…journalists, influencers, foodies (that sort of thing) and on the way down my mum told me “oh by the way, I’m now vegetarian.”
Back then I didn’t have the same confidence in my ability to cook, that I do now, so everything was meat or fish, there wasn’t a vegetarian dish on the tasting menu 😬
So, I decided to call a dish ‘Mother’ and create it with all five of the taste sensations in mind - sweet, sour, savoury, bitter and umami. I named it so, as a tongue in cheek nod to this story and it actually seemed to be the favourite on the menu that night. I think it naturally resonated with people (as well as being a tasty dish of course)… and so it stayed.
Born in 2016 and still on the menu today ✨
