We would like to say a huge thank you to everyone for all your comments, feedback, and reactions to yesterday’s post.

Yesterday was a big learning experience for us. We made some mistakes, and we’ve taken your feedback on board. As a result, we have already made some changes to help us provide a better experience for everyone.

First of all, we want to thank our incredible team. Despite the stressful situation, every member of staff gave their absolute best. From our pot wash to our front-of-house team, everyone worked incredibly hard. A special thank you goes to one of our front-of-house team members, who was only meant to come in for a 2-hour trial but stayed for 5 hours and helped wherever she could. We couldn’t be more grateful.

To improve our service, we will now only accept two walk-in parties per hour. If we are unable to seat you as a walk-in, we sincerely apologise, but this change will help prevent anyone from waiting an hour or more for their food.

Tonight has been one of the hardest nights we’ve had.

I honestly don’t know how to put into words how we feel. We are not superheroes. We don’t have superpowers. We are just a small family business trying to create something special here in Louth while surviving in a very difficult economy, just like so many other small businesses.

Tonight, we had only three bookings. We were prepared for a few more walk-ins, but on a Wednesday evening we could never have predicted what happened. By 7pm, my husband, who is our sushi chef, tonight’s delivery driver, and the restaurant manager all at once. Called me saying the restaurant was suddenly full and he didn’t know how he was going to cope.

Despite all our efforts, some guests had to wait longer than expected, and some chose to leave. We completely understand their frustration, and for that, we are truly sorry. It breaks our hearts because we never want anyone to leave disappointed.

The truth is, we couldn’t have predicted this. We do everything we can to organise our team while also keeping the business alive. We have wages to pay, VAT, suppliers, bills, and every other responsibility that comes with running a small family restaurant. We simply cannot staff every quiet Wednesday as if it were a Saturday night.

Tonight, we had over 100 people come through our doors when we had expected only a handful. We were overwhelmed, but we never stopped trying our best.

To everyone who waited with patience and kindness, thank you from the bottom of our hearts. Your understanding means more than you know.

To those we let down tonight, we are deeply sorry. We will learn from this, we will keep improving, and tomorrow we will be back doing what we love, working as hard as we can to give you the best experience possible.

Thank you for supporting a small family business. We are only human, and every single day we give everything we have.
