SIMPLY SEASONAL - Veal Sweetbreads, Girolles, Broad Beans & Peas

Veal sweetbreads are one of my favourite ingredients. If I see it on a restaurant menu, I’ll always order it.

It works beautifully with summer girolles, peas and broad beans.
