If there’s one dish that perfectly bridges the gap between classical Europe and the Middle East, it has to be our Sirloin Tataki. We take a premium cut of sirloin, give it a quick sear to keep the center tender and pink, and serve it with our own twist on a classic Ajo Blanco. While the name literally means "white garlic" in Spanish, this traditional Andalusian almond and bread-based soup actually predates the famous tomato gazpacho.
In our version, the Ajo Blanco is reimagined as a rich, velvety cream infused with pear and cherry vinegar, striking a beautiful balance between fruity sweetness and a bright, subtle acidity. To round out the plate, we’ve added cherry tomatoes, pickled radish, and seasonal green almonds for a refreshing crunch. It’s a dish where the soulful depth of Southern Spain meets our signature Mediterranean freshness, creating a bite that is as complex as it is delicious.
