Meet Amine, our assistant restaurant manager and cocktail developer.

Amine joined the team in March this year and has played a key role in developing our drinks offering, including working closely with to create the Aulis Martini.

His current favourite cocktail is our Sticky Toffee Pudding Old Fashioned, made with Fielden rye washed with custard and browned butter, alongside a sponge water made from toasted oats. It has all the flavours of a sticky toffee pudding, without any baking.

Meet Charles, our restaurant manager and sommelier.

After spending time working across our restaurants in the Lake District, Charles moved to London and joined the Aulis London team in 2022.

Charles is passionate about championing British w**es and producers. In 2024, he led the decision to remove non-British sparkling w**es from our w**e list entirely. Earlier this year, Charles was named among the UK's top 25 sommeliers in Sommelier Edit's Top 100 Sommeliers UK 2026, recognising his leadership and contribution to the w**e industry.

His current favourite w**e on our list is Woodfine Wines' 'Lost Vagus', a 2025 Solaris Blend orange w**e from Seer Green, Buckinghamshire, produced just 21 miles from Aulis.

Meet Ben, our sous chef.

Ben recently received The Social Responsibility Award in the Young Chef UK finals for 2026-2027. An incredible achievement, this award recognises a dish that champions socially responsible and sustainable practices, values at the core of our restaurants.

Ben joined our team at Aulis London just over a year ago. His current favourite dish on our autumn menu is aged monkfish, cooked in fennel pollen, with fermented fennel and Crown Prince squash.

A closer look at three of our drinks at Aulis London, each showcasing ingredients grown at Our Farm in the Lake District.

Our Sorrel is part of our alcohol-free Soft Flight, made using sorrel leaves and stems with white verjus, strained until clear and carbonated. Dry, green and mineral, it's paired with our courgette course to cut through the richness of the yeast butter.

The Aulis Martini, created in collaboration with Patience Distillery, combines a bespoke seasonal gin with elderflower grown at Our Farm, foraged pineapple w**d, dry vermouth and fino sherry. Herbaceous and tropical, it's best served ice cold from the freezer.

Our Plum & Sake Highball uses plums grown at Our Farm to make a house umeshu, combined with Junmai sake, Capreolus plum eau de vie and a touch of hops. Lightly hopped with sweet, slightly salty plum notes and a crisp finish, it's served over a single pillar of ice.

Frozen Tunworth cheese with malt crumb, Victoria plum and lemon thyme.

Our take on a British cheese course at Aulis.

Tunworth, a British Camembert-style cheese known for its rich, savoury and earthy flavour, is frozen using liquid nitrogen to create a delicate, snow-like texture.

A familiar ingredient presented in an unexpected way, with the malt crumb, Victoria plum and lemon thyme bringing balance while allowing the Tunworth to remain the star of the course.

Our new head chef, Mark Catchpole.

Having spent four years with us at Roganic Hong Kong, Mark now reunites with Simon Rogan MBE and executive chef Oli Marlow at Aulis London, bringing with him experience from The Fat Duck, Dinner by Heston Blumenthal and Attica in Melbourne.

At Aulis, Mark will lead our team, alongside restaurant manager Charles Carron Brown and continue to develop our ever-evolving menus, guided by the seasons and produce grown for us at Our Farm by Simon Rogan in the Cartmel Valley.

We can’t wait to show you what he’s been working on.
