Our Cacio e Pepe.

Parmesan, pecorino, toasted black pepper, butter, and a touch of pasta water create the perfect emulsion.
Rich and silky, it coats our fresh pasta beautifully.

Finished with generous pecorino, cracked black pepper, and a drizzle of olive oil.

Barolo-braised ox cheek, slow-cooked until meltingly tender, served over Maranello parmesan polenta with pink pickled onions and rosemary sourdough pangrattato for crunch.

🔥 Rascard — mountain cheese, Barbrasso style.

Launching tomorrow and every Wednesday

Raw milk cow’s cheese from Val d’Aosta.
The cousin of Fontina, as Vittorio likes to say, and treated with full alpine respect.

Grilled raclette-style, melted hard and spooned loose.
Slow-cooked, deeply caramelised onions, pure French onion soup vibes.
Cornichons. Dijon. Proper pickles.

Finished with a sharp, bitter leaf salad, heavy on radicchio for balance.
Served with Francesina mortadella cubes, because that’s how we do it.

Salty. Bitter. Acidic. Melty.
Peak winter comfort, grilled.
