our focus has always been on slow smoked meats, cooked over indirect heat for longer periods of time, slowly rendering the fats and breaking down the collagens, creating an unctous texture. as barbecue dates back to its roots, poorer communities were left with non-primal, tougher, and often, less desirable cuts of the animal. they found that by slow cooking over gentle heat, they could render the meat into something incredibly tender, and incredibly delicious from the gentle wood-fire smoke. we delve into the rich history of smoking over on our journal. stay tuned.
