What is Black Pudding? 🇬🇧🥓
One of the questions we’re asked most by visitors from around the world is, “What exactly is black pudding?”
Black pudding is one of Britain’s oldest and most traditional foods, dating back over 1,000 years. Long before refrigeration existed, people believed in wasting nothing from an animal. After a pig was slaughtered, the blood was mixed with oats, herbs and spices to create a nutritious sausage that could be preserved and enjoyed for longer.
Over the centuries, black pudding became especially popular in northern England, Scotland and Ireland. By the Victorian era, it had become a familiar part of the traditional Full English Breakfast—a hearty meal that fuelled farmers, labourers and factory workers before a long day’s work.
What’s in it?
Traditional black pudding is made from:
• Fresh pig’s blood
• Oatmeal or barley
• Pork fat
• Onion
• Salt, pepper and a blend of herbs and spices
The mixture is stuffed into a natural casing, cooked, then sliced and fried or grilled until crispy on the outside and soft in the middle.
Is it good for you?
Black pudding is surprisingly nutritious. It is naturally:
