A Colombian dish : La Bandeja Paisa

The main characteristic of this dish is the generous amount and variety of food in a traditional bandeja paisa: red beans cooked with pork, white rice, ground meat, chicharon, fried egg, plantain (patacones), chorizo, arepa, hogao sauce, black pudding (morcilla), avocado and lemon. Paisa refers to a person from the Paisa Region and bandeja is the Spanish word for platter / tray.

(Bandeja paisa, also known as bandeja de arriero / bandeja montañera / or bandeja antioqueña, is a typical meal popular in Colombian cuisine, especially of the Antioquia department and the Paisa Region, as well as with the Colombian Coffee-Growers Axis, Caldas Department, Quindío, Risaralda, and part of Valle del Cauca).

Característica fundamental de este plato es su enorme abundancia, tanto en cantidad como en variedad de alimentos, de tal modo que la bandeja paisa completa solo cabe servirla en platos grandes llamados bandejas.
En su forma y composición actual, es un plato de desarrollo reciente; no aparecen referencias en los libros de cocina anteriores a 1950 ni en otros documentos anteriores a esa fecha. Es probablemente una evolución comercial, desarrollada en los restaurantes antioqueños de Medellín, Bogotá y otros sitios de Colombia, del tradicional «seco» antioqueño, compuesto por arroz, frijol, carne, algo de frito y plátano, y acompañado por arepa. También puede haber evolucionado a partir de otro plato de común usanza en la región, inclusive hoy, conocido ampliamente como «típico montañero» o simplemente «típico».
(La bandeja paisa es un plato herbolario también conocido como «bandeja de arriero» o «bandeja montañera», típico de la cocina antioqueña, correspondiente a los actuales Antioquia, el Viejo Caldas o Eje Cafetero : Caldas, Quindío, Risaralda, y parte del norte del Valle del Cauca y el norte del Tolima en Colombia).

L'arepa était traditionnellement faite avec du maïs travaillé à la main, mais depuis l’invention de la farine de maïs pré-cuisinée (harina Pan / invention de Polar), elle est confectionnée très simplement.

Très populaire au Venezuela et en Colombie, l’arepa est un en-cas / un sandwich, mais elle peut aussi être servie au petit-déjeuner, fourrée avec du fromage (à mi-chemin entre la vache qui rit, la mozzarella et le queso de mano), ou d’autres ingrédients (viande, préparations diverses). Au dîner, on la sert tostada.

- Elle fait aussi partie de la composition de la Bandeja Paisa, un plat copieux et typique de la cuisine colombienne.
- Une version classique au Venezuela est la Arepa "Reina Pepiada" qui se sert en général avec de volaille, de l'avocat et de la mayonnaise.

Mais la arepa reste le plus souvent mangée avec du fromage grillé et du beurre.

Arepas are popular in Venezuela and Colombia but also in London. Arepas are made of precooked corn flour (farine de maïs). It is a special precooked type that usually goes by the name harina de maiz (harina Pan is the most popular brand). It can be found in London (see Distriandina Ltd.)
Arepas were originally made by the indigenous inhabitants of Venezuela and Colombia. In Colombia, arepas are made a little smaller and are spread with butter or topped with cheese. They are also sold in Camden town market but the ones from Mambo Cafe are delicious.

CAFE MAMBO is a very simple place in London, near Fulham Broadway Station.
It serves excellent homemade Latin American dishes and amazing fresh fruit juices and lemonade.
Excellent value and massive portions.
Very recommended for brunch/lunch.
---> For example, you can have :
- Delicious arepas (colombian style : with cheese on the top, not inside as in Venezuela),
- fantastic fresh lemonade with crushed ice and mint leaves,
- true coffee,
- and, as a dessert, brevas (higos) rellenas de arequipe (dulce de leche) are so good with a dash of cream (crème Chantilly) !!!

(You can also have a full english breakfast for only 4£).
