It might feel like we’ve had an endless summer, but autumn is quietly waiting around the corner...

So when London gives us one of those days that’s not too hot, not too cool, but just right, we make the most of it.

We open up the front of the restaurant, let the sunshine in and blur the line between inside and out – giving the whole of Olea a little of that al fresco Mediterranean feeling.

You stop for a drink. A couple of small plates find their way to the table. A closer look at the menu and the w**e list suddenly seems like a very good idea.

Every lunch service begins long before the first order is called. 
There’s a quiet focus to mornings in the Olea kitchen. Bread comes out of the oven, dips and sauces are made from scratch, vegetables are prepped and every station is organised before the pace picks up. 
By the time the first guests arrive, hours of preparation are already behind us.

Perfectly crisp salmon skin doesn’t happen by accident.

You’d be forgiven for thinking it comes from a searing hot pan. In fact, the opposite is true.

Cooked skin-side down, low and slow, the natural fat beneath the skin gently renders away, naturally basting the fillet from below as the skin crisps to a beautifully golden finish. 
In the Olea kitchen, patience and care are ingredients too.

Turkey has one of the oldest w**e-producing cultures in the world.
 Yet for many people, Turkish w**e remains one of the Mediterranean’s best-kept secrets. 
Kalecik Karası – said to have been grown in Turkey since the time of the Hittite Empire, between 1650 and 1200 BC – is one of the country’s most ancient indigenous grape varieties. It produces elegant, vibrant w**es often likened in style to Pinot Noir or Gamay. 
The bottle pictured here from our extensive w**e list pairs Kalecik Karası with Syrah to create a beautifully balanced red. 
Served alongside steak from the mangal, we’d say it’s a combination well worth discovering.
