Hola Ian!

Meet Ian Ciapara, our Head Chef. Her path winds from the Pacific shores of Baja California to the smoky kitchens of Oaxaca, through mezcal distilleries and London’s most beloved Mexican tables, and it has led her, inevitably, here. At Cavita, Ian brings years of unlearning and relearning, of cooking beside traditional cooks and letting Mexico speak through every dish. This is her kitchen now.

“ After 20 years working in this industry, I am constantly reminded of the importance of community and human connection, and that every day is an opportunity to learn something new.
We live in a world where good, healthy, delicious food is often almost inaccessible in cities.

With Cavita, I want to show that it is not impossible. The roots of Mexican food are our foundation.

For me, ingredients are the soul of the kitchen, and the love and care with which we prepare and deliver every dish to the table is the essence that creates something magical. It is an art.
