As our Managing Director prepares to say farewell to the Zia Lucia family, he’s created one final special with our Exec Chef to mark his journey with us—a blend of his Irish roots and his love for Italian pizza. Introducing the Sassy Doyler 🍕
Here’s the story behind the pizza, in his own words:
🗣️ "This one started on the west coast of Ireland, where hearty food wasn't about luxury—it was about making simple ingredients unforgettable.
Potatoes were always at the centre of the table. White onions brought sweetness and warmth, and wild rosemary filled the air after the rain. The friarielli peppers🌶️? They're the Italian twist—a reminder that life has a funny way of taking an Irishman and making him fall in love with pizza.
As I leave Zia Lucia, I wanted one final pizza that reflects both parts of my journey: where I came from and the incredible Italian family I've been lucky enough to work alongside. It's humble. It's comforting. It's a little unexpected."
