Prosciutto & Stracciatella.

If you’ve never had stracciatella in a sandwich, this is a good place to start.

Stracciatella is the soft, creamy filling inside burrata — delicate strands of mozzarella mixed with cream. Here, we pair it with prosciutto, pesto, sun-dried tomatoes, fresh leaves, pistachios and balsamic, all inside our focaccia.

The prosciutto brings saltiness, the stracciatella creaminess, while the pesto, tomatoes and balsamic bring everything together.

It’s one of those combinations that makes sense the moment you taste it.

A great sandwich starts with the bread.

Before BRECHDAN opened, we spent a long time searching for the right focaccia recipe — not just bread called focaccia, but the real thing.

An Italian-style focaccia, made using a 48-hour cold fermentation, giving the dough time to slowly develop its flavour, strength and light, airy crumb.

Baked until golden, with a delicate crisp crust, a soft centre, and just enough structure to hold every ingredient without overpowering it.

This is the focaccia we chose for our sandwiches.

Not an afterthought.
